No Bake Coconut Date Balls

Ingredients

  • 10-12 pitted Medjool dates
  • 2 cups pecans
  • pinch sea salt
  • 1/4 cup shredded coconut

Instructions

  • Soak the dates for 10 minutes in warm water until
    softened.
  • Pulse the soaked dates and pecans in a food
    processor until a dough is formed.
  • Scoop 2 tablespoons of the mixture and use your
    hands to roll into a ball.
  • Allow to sit in the fridge for 5 minutes to solidify.
  • Roll the bites into the shredded coconut pressing
    gently so they adhere.
  • Store in the fridge and enjoy!
