Chickpea Stuffed Sweet Potatoes

- 4 medium sweet potatoes
- 1 15 ounce can of chickpeas,rinsed and drained
- 1 tbsp olive oil
- 1/8 tsp garlic powder
- 1/2 rap cumin
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 cups Spinach
Preheat oven to 400 F and cook sweet potatoes ona parchment lined baking sheet for 45 minutes to 1hour depending on size of potatoes andtenderness. Heat olive oil in a skillet on medium heat. Add in thechickpeas and spices. Stir and cook for 4 minutes. Add greens and quickly cook until wilted, stirringfrequently. Slice the cooled potatoes lengthwise and mashthe center down making space for the chickpeamixture. Spoon it into the center of the potatoesand enjoy!
