Sweet Sausage & Pepper Hash

Ingredients

  • 2 medium sweet potatoes chopped to about ½ inch chunks
  • 1 medium onion roughly chopped
  • 3 medium bell peppers:red, orange and yellow chopped
  • 1/2 Ib fresh sausage
  • 2-4 eggs
  • 1/4 tsp smoked paprika
  • Sea salt and black pepper
  • 2 tbsp coconut oil

Instructions

  • Preheat oven to 400 °F.
  • Heat a large oven safe cast iron skillet over medium
    heat.
  • Melt 1 tablespoon of coconut oil and crumble
    sausage into the pan, and stir.
  • When sausage is ¾ of the way done, add the onions
    and peppers and continue to stir until the sausage
    is fully browned and the onions and peppers are
    fragrant.
  • Remove from heat, drain fat as desired, and set
    aside
  • In a separate skillet over medium heat, add 1
    tablespoon of coconut oil and add the chopped
    sweet potatoes.
  • Sprinkle with smoked paprika, sea salt and pepper
    and stir to coat.
  • Cook uncovered, until the potatoes begin to brown
    and then cover and continue to cook to soften,
    stirring occasionally, for about 5–10 minutes.
  • Once the potatoes are cooked through, add them to
    the sausage skillet and stir.
  • Create small wells for your eggs (2–4 depending on
    preference) and then carefully crack each egg into a
    space.
  • Place the skillet into the 400 °F oven to bake the
    eggs to preference.
  • Allow to briefly cool and enjoy warm!
