Make Ahead Egg Muffins

Ingredients

  • 12 large eggs
  • 2 tablespoons red onion chopped
  • ¼ cup cooked turkey bacon chopped
  • ¼ cup cheddar cheese shredded
  • ¼ cup red pepper chopped

Instructions

  • Preheat the oven to 350 °F.
  • Whisk together eggs, onion and salt and pepper to taste.
  • Spray a muffin tin with coconut oil cooking spray and fill each slot half way with mixture.
  • Top each muffin with red pepper, cheese and turkey bacon.
  • Bake for 15–20 minutes or until muffins are firm.
  • Allow to cool and serve immediately or store for up to 4 days.
